A tasty simple crisp, cool salad to use up your bounty of summer garden veggies.
Not much is better than a cool crunchy garden cucumber you grew yourself. Other than just pickles, here's a quick salad to make out of your cool cucumbers.
Sour Cream Cucumber Salad
4 medium cucumbers, thinly sliced
¾ cup sour cream or plain Greek yogurt
3 Tablespoons lemon juice, fresh squeezed
1 Tablespoon sugar
¾ teaspoon garlic powder
¾ teaspoon pink Himalayan salt
½ teaspoon black pepper
1 small red onion, thinly sliced
2 Tablespoons fresh dill, coarsely chopped (or dried dill works as well)
3 Tablespoons apple cider or white vinegar (optional)
1 Tablespoon fresh mint, coarsely chopped (optional)
In a large bowl, whisk together sour cream/Greek yogurt, lemon juice, sugar, garlic powder, salt, + pepper, + vinegar (if using). Add cucumber, red onion, dill, + mint (if using). Mix until cucumber is well coated. Serve immediately or chill before serving.
This makes a nice salad that can be eaten on its own or as a side dish.
