Roasted New Potatoes

A simple side dish to serve that tastes great with any grilled meat main entree.

Roasted New Potatoes

2 pounds small new potatoes

3 Tablespoons butter, melted

2 Tablespoons olive oil

2 Tablespoons whole mustard seeds

salt + pepper to taste

2 Tablespoons fresh chives, minced

2 Tablespoons fresh parsley, minced

Preheat oven to 400 degrees F. Place potatoes in a colander + rinse with cold water. Dry with paper towels + transfer to a rimmed baking sheet large lined with parchment paper. Spread potatoes out on baking sheet in a single layer. Drizzle potatoes with butter + olive oil, then sprinkle with mustard seeds. Season with salt + pepper. Place baking sheet on middle rack of oven + roast for about 25 minutes or until soft when pierced with a fork, shaking pan once or twice to rotate potatoes. Transfer potatoes to a bowl or platter, top with fresh chives + parsley.

Annnnd if feeling extra special, add some shredded cheddar on top that, that's what we do!
