We make this typically at Christmas to snack on while waiting for the big meal, but it's really good any time.
This recipe can be split after making to make 2 smaller amounts or 1 large amount.
Party Cheese Spread
2 packages (8 oz. each) cream cheese, softened
1 package (8 oz.) lunch meat ham, chopped fine (we prefer nitrate/rite-free)
5 green onions, chopped fine
1 cup cheddar cheese, grated
1 cup mozzarella cheese, grated
1 cup pecans, chopped (optional or use another nut)
Mix all ingredients except for nuts in a large bowl. Make sure it's all well combined. Divide into equal parts + shape into balls or logs or transfer to a shallow serving dish to dip out of. Coat mixture on the outside until fully-covered with nuts (or not). Wrap in plastic wrap + chill for 2 hours or until ready to serve. Let it set out just a bit to soften enough to scoop up then serve with crackers.
We usually call this Party Cheese Balls because we roll it in balls for whatever reason but I didn't want to do that here, so really it's just spread so I renamed it : ) haha
And we never wait to let it be spreadable, we just dig it off cold with a butter knife, push it on a cracker + eat it! So if you wanna do that too, feel free!
Note: The flavors meld together + are more flavorful if you make it in advance a couple days before serving.
