A great alternative to a graham cracker-style crust. Again, a recipe found lying in a Red River, New Mexico cabin kitchen drawer that was submitted by Betty Scott in a church fundraiser-produced cookbook from University United Methodist Church in Wichita Falls, Texas.
Oatmeal Pie Crust
2 cups quick-cooking oatmeal
1/2 cup brown sugar
1/2 cup butter, melted
1 teaspoon vanilla
Toast oatmeal lightly in oven. Remove from oven, add sugar & mix with oatmeal. Stir in butter & vanilla; mix well. Press onto sides & bottom of a buttered pie plate. Bake at 375 degrees for 10 to 15 minutes or until lightly browned. Cool completely before filling with desired filling.
Chopped nuts like pecans may be added to the mixture for variation.
