Jalapeno Pimento Cheese

No, this is NOT the orange goo you see on the shelf at the grocery store... This is the good stuff. If you love cheese, you're gonna love this - on bread, crackers, or just on a spoon.

We used to buy homemade jalapeno pimento cheese from a local smoke house but then we figured out how to make it ourselves, let me tell you - if you think you hate pimento cheese because of what you've seen or had of the stuff from the store, please give this a try (if you like cheese...)


Jalapeno Pimento Cheese


1/2 pound cheddar cheese, grated (we prefer Tillamook)

4 green onions, chopped fine

4 jalapeno peppers, chopped fine (we use the seeds too, we like it hot)

1 small jar organic pimentos, chopped fine

1/2 cup mayonnaise (we prefer Duke's)


Mix all ingredients together until well combined. Serve on sliced bread, crackers, or on a spoon.


Another recipe that when it's done is hard to keep around with our family. : ) We're cheese hounds though.


If you don't want it hot, just seed the jalapenos before chopping or don't use them at all. Or if you want it hotter, add more jalapenos with their seeds! Also, pimentos (which are tiny sweet red peppers) can be found at the store in the canned food area by the pickles, olives or by the canned vegetables. When I'm done with the jar I always save them to put something else in because they're just so cute + small : )
