Grilled Lobster

A great main entree to share with your Sweetie on your Anniversary or Valentine's Day instead of going out or any other day you want to feel special, for that matter!

Grilled Lobster

4 whole ( 1½ pound) live lobsters

¾ cup butter, softened

2 Tablespoons fresh flat leaf parsley, finely chopped

1 Tablespoon green onion, minced

2 cloves garlic, minced

1 Tablespoon lemon zest

1 Tablespoon fresh lemon juice

½ teaspoon pink Himalayan salt

½ teaspoon freshly-cracked black pepper

2 whole lemons, sliced

Bring large stock pot of water to a rolling boil. Working in batches, place tip of a sharp chef's knife in the lobster's back, just below its head + working quickly, slice through the head to dispatch the lobster. Submerge lobster in boiling water head first, then cover stock pot with lid. Cook for 2 minutes, until bright red. Transfer to ice-bath to cool + stop cooking process, about 5 minutes. Using a very sharp knife, split lobster into 2 halves. Clean out innards from body + discard. In a medium bowl, mix softened butter with parsley, green onion, garlic, lemon zest + lemon juice. Season with salt + pepper. Whisk together until smooth. Set aside. When ready to cook, set grill temperature at 425 degrees F + preheat, lid closed for 15 minutes. When grill is hot, place lobsters on grill, flesh side down, + cook for 4 minutes. Turn, + spoon about 2 teaspoons butter mixture onto each lobster half. As butter begins to melt, baste with a brush all over the flesh. Cook 4 to 5 minutes until cooked through + coated in melted butter. Serve immediately with sliced lemons + desired side dishes.

This is one thing on the menu that always feels like a special splurge + makes them feel special. Nothing like making it yourself at home (+ saving big $$$ in the process)!
