A cool side dish great with BBQ or roasted chicken.
Now before you roll up your noses...
I know Cole Slaw kinda has a reputation, you either like it or you hate it. Most everyone just passes it by or throws it in the trash but here's a tasty mixup to try.
C'mon! Give this Creamy Cole Slaw a chance!
A good cole slaw recipe is nice to hold on to to share with those who share your enjoyment of a good BBQ side dish so your beans + potato salad aren't so lonely.
Creamy Cole Slaw
1 cup mayonnaise (we use Duke's)
4 teaspoon white vinegar
¼ cup sugar
¼ teaspoon dry mustard
¼ teaspoon pink Himalayan salt
In a large mixing bowl, whisk mayonnaise, vinegar, sugar, dry mustard, + salt until smooth. Add in shredded cabbage cole slaw mix + fold over with spatula or wooden spoon until cabbage mix is completely coated. Cover + refrigerate 2 hours or overnight so flavors can meld together.
Sidenote: If you don't like cabbage, just give this a try, you may be surprised...
(I'll update photo next time I make some so you can see what it looks like)
