A tried & true recipe that's really great when made with locally-grown & pressed olive oil & balsamic vinegar.
The flavor of this recipe can be completely changed by just switching the flavor of balsamic you use. We typically use Traditional but there are so many balsamics to choose from so just find the one you love!
1 teaspoon garlic powder
1 teaspoon basil, dried
1/2 teaspoon himalayan pink salt
1/2 teaspoon pepper
2 teaspoons onion, dried minced or fresh chopped
4 garlic cloves, minced
1 tablespoon olive oil, extra virgin (we only use Texas Hill Country Olive Company's oils)
1/2 cup balsamic vinegar (we only use Texas Hill Country Olive Company's balsamics)
8 chicken thighs, boneless skinless
sprinkle fresh parsley, chopped
Combine the first five dry spice ingredients in a small bowl & coat both sides of chicken thighs with seasoning. Set seasoned chicken aside. Pour olive oil & garlic into bottom of crock pot then place seasoned chicken on top of oil & garlic. Pour balsamic vinegar over the chicken. Cover & cook on High for 4 hours. After chicken is done, remove from crock pot & place on serving dish. Top chicken with fresh chopped parsley & serve.
This is a great main dish to make when taking a meal to a new mom or just to have at home with your family. Double the recipe to have enough to share & to enjoy for dinner.
